Mango Guacamole

A collaboration between me and ChatGPT, not really though

I would never let AI write my recipes—I wouldn’t even let most people write them for me. Recipe writing is a skill, and when done well, it offers those who use it an easy way to taste something good, eat something good, and experience a proven formula crafted by someone who can not only taste but also cook.

That said, AI is a useful editing tool for me. I work fast, make a lot of typos, and appreciate how quickly AI helps me clean those up in real time. It’s also helpful when I’m stuck on a sentence—almost like a writing coach (though my dear friend Dianne Jacob still holds that title). Ironically, AI makes a lot of the same mistakes I did in my early years of recipe writing, before I had my own coaching (yes, from Dianne). Could AI improve the way I did? I’m skeptical. But then again, I have the advantage of tasting the results. And that’s something AI will never be able to do.

Either way, here’s a mango guacamole recipe I’ve had since my early Brooklyn days—somehow, it never made it Under the  (my) Mango Tree. But here it is now, just in time for Sunday’s Super Bowl!

 

Mango Guacamole

Makes approx.. 3 cups

This spicy guacamole gets a tropical twist from fresh mangoes, adding a bright sweetness that perfectly balances the heat of jalapeño. Scoop it up with chips for the big game, dollop it on tacos and nachos, or enjoy it by the spoonful—just like I do!

Ingredients

4 avocados, ripe and soft but not mushy
½ cup chopped mangoes
¼ cup finely chopped fresh cilantro leaves
¼ cup finely chopped tomatoes
¼ cup finely chopped white onions
1 jalapeño, seeded and chopped fine
1 teaspoon cumin powder
1-2 teaspoons salt
Juice of 3 limes

Method

In a heavy bottom bowl, mash the avocados one by one with a large fork until chunky but relatively smooth. Add the mangoes, cilantro, tomatoes, white onions, jalapeño, and cumin, then continue mashing and mixing until well combined. Sprinkle in the salt and mix thoroughly. Juice the limes into the guacamole one by one, stirring and mashing after each addition. Taste and adjust the seasoning as needed, adding more salt until the desired flavor is reached—about 2 teaspoons in total.
